A simple and flavorful pasta dish with tuna, anchovies, olives, and lime zest, cooked 'in bianco' (white, without tomato sauce). Chef Ruben demonstrates his quick and tasty version.

Ingredients
9 items- GarlicUse 2-3 cloves, chopped
- Tropea Red OnionAbout half a red onion, sliced
- Chili PepperOne chili pepper, chopped (adjust to taste)
- AnchoviesA few anchovies, the chef uses about 6-8
- OlivesA handful of olives (likely green or mixed)
- SpaghettoniThick spaghetti or regular spaghetti, about 100g per person
- TunaOne small can of tuna, drained
- BasilFresh basil leaves, to taste
- Lime ZestGrated zest of one lime
Method
- In a pan, sauté garlic, chopped Tropea red onion, and chili pepper in olive oil.
- Add anchovies and stir until they dissolve into the oil.
- Add a ladle of pasta cooking water and olives. Let it simmer briefly.
- Meanwhile, cook the spaghetti (spaghettone) in salted boiling water until al dente.
- Turn off the heat under the pan. Add the drained tuna and break it up gently.
- Add the cooked pasta to the pan and toss to combine.
- Finish with fresh basil and grated lime zest. Serve immediately.
