Ingredients

- 2 pcsOnionmedium onions
- 20 gButter
- 20 gCane Sugarbrown sugar
- Red Wineto taste
- 5 gSaltor to taste
- Black Pepperto taste
- 250 gTuna in Oilcanned tuna in oil, drained
- Capersto taste, rinsed
- Lemon Juicejuice of half a lemon
- Parsleychopped, to taste
- Lemon Zestzest of half a lemon, edible peel
Method
- Caramelize the onions: In a large pan, melt butter over medium heat. Add thinly sliced onions, salt, pepper, brown sugar, and a splash of red wine. Cook, stirring occasionally, until the onions are soft, glossy, and deeply caramelized (about 15-20 minutes).
- Prepare the tuna mixture: In a separate bowl, combine the drained tuna (reserving a little oil), capers, lemon juice, and a tablespoon or two of pasta cooking water. Mash lightly with a fork to break up the tuna; optionally blend a portion for a creamier texture.
- Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente, then drain and rinse under cold water to stop the cooking. Drain well.
- Combine: In a large mixing bowl, toss the cold pasta with the tuna mixture and the caramelized onions. Mix until well combined and the pasta is coated.
- Serve: Divide among plates. Top with chopped fresh parsley and freshly grated lemon zest. Serve at room temperature.
