Pasta with Salt Cod Sauce

A simple yet flavorful pasta dish featuring salt cod (baccalà) in a rich sauce with anchovies, pine nuts, raisins, and olives, finished with crispy breadcrumbs. Inspired by Sicilian cuisine, this recipe is quick to prepare and full of Mediterranean flavors.

Method

  1. Pour olive oil into a pan and add a couple of garlic cloves and a couple of whole chili peppers (adjust chili to taste).
  2. Add the anchovies and let them melt slowly into the oil over low heat.
  3. Slice an onion and add it to the pan; cook gently without letting it brown.
  4. Add a splash of white wine and cook over low heat for about 10 minutes, stirring occasionally and adding a little water if the pan dries out.
  5. Meanwhile, toast breadcrumbs in a separate pan with a drizzle of olive oil until golden and crispy; set aside.
  6. Add pine nuts, raisins, and a handful of olives to the sauce and stir.
  7. Pour a small amount of pasta cooking water into the sauce to deglaze the pan, scraping up any browned bits from the bottom.
  8. Cook the pasta in a large pot of salted boiling water until al dente.
  9. Remove the garlic cloves from the sauce.
  10. Add a little more pasta cooking water to the sauce to loosen it.
  11. Drain the pasta and transfer it to the pan with the sauce; finish cooking together over low heat for a minute, tossing to coat.
  12. Serve the pasta topped with the crispy breadcrumbs.
