A quick and nutritious gluten-free pasta dish made with cherry tomatoes, tuna, chickpeas, and rosemary. Perfect for a family meal, especially for children, combining protein, fiber, and flavor.

Ingredients
9 items- 500 gCherry TomatoesCherry tomatoes, preferably from Vesuvius
- Extra Virgin Olive OilTo taste
- 1 pcsGarlicOne clove, slightly crushed
- 2 pcsRosemaryTwo sprigs
- SaltTo taste
- 400 gGluten-Free PastaGluten-free pasta made from brown rice flour
- 200 gChickpeasCooked chickpeas (canned or boiled)
- 200 gTunaHigh-quality tuna in oil, drained
- Parsley(optional) โ Chopped, for garnish (optional)
Method
- Crush the cherry tomatoes with your hands in a bowl.
- Add a pinch of salt to the crushed tomatoes and mix.
- In a pan, heat extra virgin olive oil with a sprig of rosemary and a clove of garlic (slightly crushed).
- Remove the rosemary and garlic once they have flavored the oil, being careful not to burn them.
- Pass the crushed tomatoes through a sieve to remove skins and seeds, collecting the puree.
- Add the tomato puree to the pan with the flavored oil and cook gently.
- Bring a pot of salted water to a boil and cook the gluten-free pasta (made from brown rice flour) according to package directions, but remove it 1 minute before the suggested time.
- Add the chickpeas to the tomato sauce and stir.
- Drain the pasta al dente and transfer it to the pan with the sauce.
- Add a little pasta cooking water to help the sauce bind.
- Turn off the heat and add the tuna (preferably high-quality, in oil), breaking it into chunks.
- Mix everything well to combine.
- Serve with a drizzle of extra virgin olive oil and optionally garnish with chopped parsley, rosemary, or marjoram.
