Pasta with Parsley Pesto and Mussels

A creamy, fresh, and super flavorful pasta dish featuring a homemade parsley pesto with almonds, capers, and Parmesan, combined with steamed mussels. Finished with a touch of lemon zest for brightness.

Ingredients
12 items- ParsleyGenerous bunch for the pesto and stems for steaming mussels
- 2 pcsGarlicOne clove for the pesto, one for the oil
- Chili Pepper(optional) — Sliced; to taste
- MusselsQuantity as desired; includes their cooking liquid
- AlmondsA handful; can substitute with walnuts
- Parmigiano ReggianoGenerous amount
- CapersUnder vinegar; if salted, rinse well
- 1/2 pcsLemonJuice for the pesto; zest for finishing
- Extra Virgin Olive OilFor pesto and cooking
- SaltFor pasta water and to adjust pesto
- SpaghettoniThick spaghetti; or any pasta of choice
- Lemon ZestFor garnish
Method
- Heat a pan with a little oil, add a clove of garlic and a few parsley stems, and optionally some chili.
- Add the mussels, cover, and cook until they open. Remove from heat immediately to prevent them from becoming rubbery.
- For the pesto, blend a generous amount of parsley, almonds, Parmesan, capers (rinsed if salted), a clove of garlic, juice of half a lemon, and enough olive oil to obtain a creamy consistency.
- Taste the pesto and add salt if needed.
- Strain the cooking liquid from the mussels and set aside.
- Shell the mussels.
- Bring a pot of salted water to a boil and cook the spaghetti.
- In a separate pan, heat a little oil with a clove of garlic and sliced chili to infuse the oil.
- When the pasta is almost al dente, drain it (reserving pasta water) and transfer it to the pan with the infused oil.
- Finish cooking the pasta over high heat, gradually adding some of the mussel cooking liquid and the shelled mussels.
- Remove the pan from the heat and stir in the parsley pesto.
- Serve the pasta with extra mussels on top and finish with freshly grated lemon zest.
