Today from my Roman terrace, I bring you white baked pasta, perfect for Easter! A recipe that truly smells of home, family, and celebration.

Ingredients
14 items- PastaUse a short pasta like rigatoni or penne; cook to al dente.
- AsparagusFresh green asparagus, tough ends removed, tips kept separate.
- ArtichokesFresh artichokes, stems peeled, outer leaves removed, chokes taken out.
- 1 pcsSpring OnionOne large spring onion, thinly sliced.
- Silano CheeseA melting cheese from the Sila region; substitute with caciocavallo or provolone.
- ParmesanGrated Parmesan for the topping and inside the mix.
- 40 gButterFor the béchamel and for greasing the dish.
- 40 gFlourAll-purpose flour for the béchamel roux.
- 500 mlWhole MilkUse fresh whole milk for the béchamel; add more to adjust consistency.
- PeasFrozen small peas; fresh if available.
- CorallinaA traditional Easter salami from Norcia/Rome, sliced about 0.5 cm thick.
- Olive OilExtra virgin olive oil for sautéing.
- SaltTo taste.
- Mozzarella or Provola(optional) — Optional; use leftover mozzarella or Agerola provola for extra richness.
Method
- Cook the pasta in salted boiling water for 10 minutes, keeping it al dente.
- Melt 40g butter in a pan, then add 40g flour and mix to form a roux. Cook briefly.
- Remove from heat, gradually add 500ml whole fresh milk while stirring to avoid lumps.
- Return to heat and bring to a boil, then dilute with a little more milk if needed to reach desired consistency. Set aside.
- In a wok, heat oil and thinly slice a spring onion. Sauté slowly.
- Trim the asparagus: snap off the tough ends, keep the tips separate, and cut the stems into pieces.
- Add the asparagus stems and frozen peas to the wok. Season with salt and cook until tender but still bright. Remove from pan and set aside.
- Trim the artichokes: peel the stems, remove outer leaves, cut in half and remove any fibrous choke. Slice or quarter.
- In the same wok, add more oil and sauté the artichoke pieces with salt until browned. Add a splash of water and cook until tender.
- Add the reserved asparagus tips to the artichokes and cook briefly. Remove from heat.
- Slice the Corallina salami into half-centimeter rounds.
- In a large bowl, combine the cooked pasta, cooked peas and asparagus stems, a generous amount of béchamel, the sliced Corallina, pieces of Silano cheese, and optional torn mozzarella or provola. Mix well.
- Butter a baking dish generously.
- Transfer the pasta mixture into the dish, spreading evenly.
- Top with the sautéed artichokes and asparagus tips.
- Sprinkle generously with grated Parmesan cheese and dot with a few small pieces of butter.
- Bake in a preheated oven at 200°C until golden and crispy on top, about 20-25 minutes. Serve hot.
