Homemade Tomato Passata

A classic Italian summer tradition: making passata (strained tomato puree) at home with the whole family. The recipe uses ripe, juicy tomatoes, a pinch of salt, and fresh basil, sterilized in jars for long-term storage.

Ingredients
3 items- Pomodori MaturiUse a mix of ripe tomatoes such as cookie, casalino, piccadilly, san marzano
- SaltA pinch per jar
- Fresh BasilOne leaf per jar
Method
- Wash the tomatoes thoroughly and remove the stems.
- Blanch the tomatoes in boiling water for about 2 minutes.
- Drain the tomatoes and pass them through a food mill to separate the pulp from skins and seeds.
- Pour the tomato puree into clean jars.
- Add a pinch of salt to each jar.
- Place a fresh basil leaf in each jar.
- Close the jars tightly.
- Place the jars in a large pot, cover with cold water, and line the bottom with a cloth to prevent breakage.
- Bring to a boil and sterilize for 30–40 minutes.
- Let the jars cool completely in the water before removing.
- Store in a cool, dark place.
