Homemade Tomato Passata

A classic Italian summer tradition: making passata (strained tomato puree) at home with the whole family. The recipe uses ripe, juicy tomatoes, a pinch of salt, and fresh basil, sterilized in jars for long-term storage.

Method

  1. Wash the tomatoes thoroughly and remove the stems.
  2. Blanch the tomatoes in boiling water for about 2 minutes.
  3. Drain the tomatoes and pass them through a food mill to separate the pulp from skins and seeds.
  4. Pour the tomato puree into clean jars.
  5. Add a pinch of salt to each jar.
  6. Place a fresh basil leaf in each jar.
  7. Close the jars tightly.
  8. Place the jars in a large pot, cover with cold water, and line the bottom with a cloth to prevent breakage.
  9. Bring to a boil and sterilize for 30–40 minutes.
  10. Let the jars cool completely in the water before removing.
  11. Store in a cool, dark place.
