A simple yet elegant pasta dish featuring fresh ovuli mushrooms, lemon, thyme, and Parmigiano Reggiano.

8 items- Pappardelle all'uovo frescheFresh egg pappardelle
- Ovuli freschiFresh ovuli mushrooms (Amanita caesarea)
- Extra Virgin Olive OilExtra virgin olive oil, for cooking and finishing
- LemonOrganic lemon, zest only
- Lemon ThymeLemon thyme, fresh sprigs
- Parmigiano ReggianoAged Parmigiano Reggiano, grated
- Black PepperFreshly ground black pepper
- SaltFor pasta water
Method
- Add a drizzle of extra virgin olive oil to a pan.
- Grate lemon zest into the oil and add a couple of sprigs of lemon thyme.
- Heat gently on low flame; the oil should not cook, only infuse flavor.
- Bring a pot of salted water to a boil and cook the pappardelle until al dente (fresh pasta cooks very quickly).
- Drain the pasta and immediately transfer it to the pan with the aromatized oil.
- Toss the pasta over high heat for a few seconds to coat.
- Turn off the heat.
- Add a portion of the ovuli mushrooms to the pan and toss with the residual heat (the mushrooms should be semi-cooked).
- Add a few raw slices of ovuli mushroom on top.
- Grate a generous amount of Parmigiano Reggiano over the pasta.
- Add another grate of fresh lemon zest.
- Sprinkle a few lemon thyme leaves.
- Season with freshly ground black pepper.
- Finish with a final drizzle of extra virgin olive oil and serve immediately.
