Ingredients
10 items- 1 pcsPollo Ruspante Intero Biologicowhole organic free-range chicken
- 1 pcsCeleryheart of one celery stalk
- 200 gPumpkinpumpkin, peeled and cut into pieces
- 1 pcsCarrotcarrot, peeled
- 2 pcsPotatoespotatoes, peeled
- 5 pcsSwiss ChardSwiss chard leaves, roughly chopped
- Oniona small piece of onion
- 1 pcsBuccia Di ParmigianoParmesan rind, for flavoring broth
- Parmigiano 24 Mesigrated, to taste (added at the end)
- Extra Virgin Olive Oilextra virgin olive oil, to taste
Method
- Place the whole organic free-range chicken in a large pot and cover with water.
- Add the pumpkin (cut into pieces), potatoes, carrots, celery heart, onion, and a piece of Parmesan rind to the pot.
- Bring to a boil and let simmer until the chicken is cooked through and the vegetables are tender.
- A few minutes before the end of cooking, add the chard leaves (rinsed and roughly chopped) so they wilt but remain slightly crunchy.
- Remove the chicken from the pot and let it cool slightly. Debone the chicken, discarding bones and skin, and set the meat aside.
- Remove the vegetables from the broth with a slotted spoon. Discard the Parmesan rind.
- Place the cooked chicken meat and vegetables in a blender. Add a ladle of the hot broth, a drizzle of extra virgin olive oil, and a sprinkle of grated 24-month Parmesan.
- Blend until smooth, adjusting consistency with more broth if needed. Do not add salt.
- Serve warm to your baby, or portion and freeze for later use.
- Consult your pediatrician before introducing new foods.
