A classic Tuscan bread and tomato soup, thick and comforting, made with stale bread, ripe tomatoes, and basil. Perfect for using up leftover bread.

Ingredients
7 items- Olive OilFor sautéing and finishing
- 1 pcsGarlicOne clove
- Datterini TomatoesAs needed
- Old BreadStale bread, sliced 1 cm thick
- 2 ladleVegetable BrothTwo ladles
- BasilAbundant fresh basil
- Lemon Zest(optional) — Grated zest for garnish (optional)
Method
- Heat a generous drizzle of olive oil in a pot and sauté a clove of garlic.
- Add the datterino tomatoes and cook until they break down.
- Slice the stale bread into 1 cm thick slices.
- Add the bread to the pot along with two ladles of vegetable broth.
- Let the bread break apart on its own without stirring with a spoon.
- Cover and cook for about half an hour.
- At the end of cooking, add abundant fresh basil.
- Turn off the heat and add a drizzle of raw olive oil.
- Let it cool for 10 minutes before serving (it should be served warm, not hot).
- Optionally, grate some lemon zest on top for extra flavor and to reduce waste.
