A light and delicious sandwich made with Roman pizza bread, buffalo ricotta, zucchini pesto, San Giovanni cooked ham, green beans, tomatoes, spring onions, and zucchini flowers. Perfect for a summer aperitivo or a quick lunch.

Ingredients

- Ricotta di Bufalato taste
- Prosciutto Cotto San Giovannia few slices
- Zucchinifor the pesto
- Basilfresh leaves, to taste
- Parmigiano Reggianograted, to taste
- Olive Oilextra virgin, to taste
- Saltto taste
- Green Beansa handful
- Tomatoes1-2, to taste
- Spring Onions1, finely sliced
- 2 pcsZucchini Flowers
Method
- Clean the green beans by removing the ends. Boil them in salted water until tender but still crisp, then transfer to ice water to stop cooking. Drain.
- Trim the zucchini, cut into chunks. Place in a blender with fresh basil, grated Parmesan, olive oil, and salt. Blend until smooth to obtain a zucchini pesto.
- Slice the spring onions finely. Cut the tomatoes into wedges or chunks. Season with salt, olive oil, and fresh basil.
- Cut the Roman pizza bread in half horizontally. Lightly toast the cut sides in a hot pan until golden and crispy.
- Spread a generous layer of buffalo ricotta on the bottom half of the bread.
- Spread the zucchini pesto over the ricotta.
- Arrange slices of San Giovanni cooked ham on top.
- Add the boiled green beans.
- Add the zucchini flowers.
- Top with the seasoned tomatoes and spring onions.
- Close the sandwich with the top half of the bread. Press lightly and optionally warm in the pan for a minute.
