Method
- Prepare the meat mixture: combine ground turkey thigh, pork, and beef with soaked and squeezed breadcrumbs, egg, chopped parsley, grated lemon zest, salt, pepper, and finely diced smoked provola. Mix thoroughly.
- Shape the mixture into flat, round meatballs (polpette).
- Coat each meatball in breadcrumbs.
- Make the mayonnaise: blend 3 egg yolks with lemon juice and salt; slowly drizzle in oil until emulsified and thick. Season with paprika, chili pepper, and grated lemon zest.
- Heat oil to 180°C (350°F). Fry the meatballs in batches until golden brown and cooked through, 3–4 minutes per side. Drain on a wire rack.
- Assemble the sandwich: split the Genzano bread, spread mayonnaise on both halves, add salad leaves, place the hot meatballs on top, and close.
