A delicious Roman-style chicken sandwich with crispy sautéed Sicilian broccoli, spicy chili, and a tangy mustard mayonnaise. Perfect for a quick but flavorful meal.

Method
- Cut the Sicilian broccoli into small pieces.
- Bring a pot of salted water to a boil and blanch the broccoli for 2-3 minutes until tender but still bright green.
- In a pan, heat olive oil and add a chili pepper and some crushed garlic. Sauté gently.
- Add a piece of lemon zest to the soffritto for freshness.
- Drain the broccoli and add it to the pan. Sauté until well coated and slightly crispy. Set aside.
- Prepare the mustard mayonnaise: in a bowl, mix mayonnaise, classic mustard, whole grain mustard, lemon zest, and a pinch of black pepper. Stir well.
- Season a chicken breast with salt and pepper, then coat lightly with flour.
- In a hot pan, add a drizzle of olive oil and a teaspoon of margarine. Cook the chicken breast for about 2-3 minutes per side until golden and cooked through.
- Season the cooked chicken with a pinch of salt and pepper.
- Take a sandwich bun, remove some of the crumb. Layer the sautéed broccoli, then the chicken, and spread the mustard mayonnaise generously. Close the sandwich and serve.
