Fried Chicken Sandwich With Friggitelli, Tomatoes and Stracciatella

A delicious summer sandwich with crunchy panko-crusted chicken breast, sautéed friggitelli peppers, ripe tomatoes, fresh spring onions, and creamy stracciatella cheese. Quick and easy to make at home.

Method
- Prepare the friggitelli: cut off the tip, push the stem in, and shake out the seeds.
- Heat olive oil in a pan with a clove of garlic. Add the friggitelli and sauté until soft and slightly blistered. Season with salt.
- Prepare the batter: mix flour and water in a bowl until smooth (no eggs).
- Slice the chicken breast into thin cutlets. Dip each piece into the batter, then coat with panko breadcrumbs.
- Heat oil in a frying pan for shallow frying. Fry the chicken until golden and crispy on both sides. Drain on a wire rack.
- In another pan, heat oil with garlic. Add sliced tomatoes and spring onions. Cook until the tomatoes soften. Season with salt and add basil.
- To assemble: split a bread roll (or ciabatta). Spread stracciatella on the bottom half.
- Place the fried chicken on the stracciatella. Top with the cooked tomatoes, spring onions, and friggitelli.
- Drizzle a little olive oil on the top bread half, close the sandwich, and press gently. Cut in half and serve.
