A delicious sandwich inspired by Chef Max Mariola's father: crispy pancetta, melted cheese, and sautéed vegetables cooked on the barbecue, all layered on grilled bread.

- 2 pcsBreadThick slices of good quality bread, preferably day-old
- OnionItalian onion, sliced
- Savoy CabbageSavoy cabbage, sliced
- Mela RenettaDiced
- GingerFresh, grated
- Chili Pepper(optional) — Fresh chili, chopped (e.g., jalapeño or Calabrian chili)
- Olive OilExtra virgin olive oil, for brushing and cooking
- SaltTo taste
- Pepper(optional) — To taste
- RosemaryFresh sprigs
- White Wine VinegarA splash, as done by the chef's father
Method
- Prepare the barbecue (gas or charcoal) and heat to medium.
- Add a drizzle of olive oil to the grill plate.
- Add sliced onion and savoy cabbage; cook until wilted.
- Add diced Renetta apple, grated ginger, and chopped chili pepper; season with salt; continue cooking until vegetables are tender.
- Slice bread (two thick slices) and brush with olive oil.
- Grill bread slices on both sides until lightly charred; set aside.
- Cut pork belly pancetta into halves; grill until crispy and golden on both sides.
- Cut cheese (Provolone or scamorza) into slices; remove rind if present.
- Assemble sandwich: place cheese on one slice of grilled bread, top with crispy pancetta, then the sautéed vegetables.
- Close sandwich with the other bread slice; add fresh rosemary and a splash of white wine vinegar.
- Return sandwich to the grill, press lightly, and cook until cheese melts and sandwich is heated through.
- Cut sandwich into pieces and serve.
