A delicious fried fish sandwich featuring crispy potatoes and a refreshing yogurt-based sauce.

Method
- Thinly slice the potatoes and soak them in very cold water for 10 minutes to remove starch.
- Dry the potatoes well and fry until crispy.
- Prepare the fish by removing small bones and leaving the skin on.
- Create a batter using water, flour, and a pinch of oregano.
- Dip the fish in the batter and then coat in panko breadcrumbs.
- Fry the fish.
- Prepare the sauce by mixing Greek yogurt with chopped chives, desalted capers, and chopped Taggiasca olives.
- Season the sauce with a drizzle of oil.
- Assemble the sandwich with the fried fish, crispy potatoes, and the yogurt sauce.
