Sandwich with Frittata

A sandwich with a frittata made from three types of onions (white, yellow, and red), eggs, and Parmigiano Reggiano, cooked in clarified butter. A classic from the 1980s, perfect for a snack or quick lunch.

Ingredients
9 items- 1 pcsWhite Onion
- 1 pcsGolden Onion
- 1 pcsRamata Onion
- 6 pcsUova medie
- 50 gGrated Parmigiano Reggiano
- Clarified Butter2-3 tablespoons
- SaltTo taste
- Black PepperTo taste
- Extra Virgin Olive Oil(optional) — A drizzle, optional
Method
- Clean and thinly slice the three onions.
- In a large pan, heat the clarified butter. Add the onions, season with salt and pepper, and cook over low heat until wilted.
- In a bowl, beat the eggs with a pinch of salt and pepper.
- Remove the onions from the pan and set aside on a plate.
- In the same pan, add a knob of clarified butter and let it melt.
- Mix the cooked onions into the beaten eggs, trying not to add excess moisture. Add the grated Parmesan.
- Pour the mixture into the hot pan and cook the frittata on both sides until golden.
- In the same pan (or another), melt some butter and toast the slices of rustic bread.
- Assemble the sandwich by placing the frittata between the toasted bread slices. Optionally, drizzle with extra virgin olive oil.
