Sandwich with Frittata

A sandwich with a frittata made from three types of onions (white, yellow, and red), eggs, and Parmigiano Reggiano, cooked in clarified butter. A classic from the 1980s, perfect for a snack or quick lunch.

Method

  1. Clean and thinly slice the three onions.
  2. In a large pan, heat the clarified butter. Add the onions, season with salt and pepper, and cook over low heat until wilted.
  3. In a bowl, beat the eggs with a pinch of salt and pepper.
  4. Remove the onions from the pan and set aside on a plate.
  5. In the same pan, add a knob of clarified butter and let it melt.
  6. Mix the cooked onions into the beaten eggs, trying not to add excess moisture. Add the grated Parmesan.
  7. Pour the mixture into the hot pan and cook the frittata on both sides until golden.
  8. In the same pan (or another), melt some butter and toast the slices of rustic bread.
  9. Assemble the sandwich by placing the frittata between the toasted bread slices. Optionally, drizzle with extra virgin olive oil.
