Sandwich with Fava Beans, Onions and Sausage

A rustic Umbrian sandwich made with creamy dried fava beans slowly cooked, raw spring onions, and grilled sausage, all stuffed inside a hollowed-out bread loaf and drizzled with olive oil. Inspired by the traditional 'pranzo della caccia' (hunt lunch).

Ingredients
7 items- Michele'S Bread LoafA large round crusty bread loaf; any rustic bread works
- Dried Fava BeansSoaked overnight for 12 hours, then cooked 3 hours until tender
- Cannara Spring OnionsCoarsely chopped raw; use mild spring onions
- 3 pcsItalian SausagesSmall pork sausages, casings removed and split open
- Olive OilExtra virgin olive oil for drizzling
- SaltTo taste
- Black PepperFreshly ground, to taste
Method
- Soak the dried fava beans in water for 12 hours.
- Drain the beans, then cook them in fresh water for about 3 hours until tender. Drain, reserving some cooking liquid.
- Cut the top off the bread loaf and hollow out the inside, leaving a thick shell. Drizzle a little olive oil inside.
- Remove the string from the sausages, split them open lengthwise, and flatten them. Cook the sausages in a hot pan without any oil until browned and cooked through.
- Peel the spring onions and chop them coarsely. Season with salt and pepper.
- Place a layer of the cooked fava beans into the hollowed bread.
- Add a generous amount of the raw chopped spring onions on top of the beans.
- Place the cooked sausages on top of the onions.
- Drizzle with olive oil and season with additional salt and pepper to taste.
- Optionally, allow the sandwich to rest for about an hour for the flavors to meld, or serve immediately.
- Cut the sandwich in half and serve.
