A delicious panino made with pan pizza, Sicilian caponata (sweet and sour eggplant stew), and seared fresh tuna. Perfect for a summer meal at the beach.

- EggplantEggplant, 3 slices then cubed
- Cherry TomatoesCherry tomatoes
- 1/2 pcsOnionHalf onion
- CeleryCelery
- Peeled TomatoesCanned chopped tomatoes
- Desalted CapersDesalted capers
- Taggiasca OlivesTaggiasca olives
- Pine NutsPine nuts
- 2 pcsDried Chili Pepper2 dried chili peppers
- SugarA handful of sugar
- White Wine VinegarWhite wine vinegar
- BasilBasil
- MintMint
- Fresh TunaFresh tuna slice
- LemonLemon zest and juice
- Extra Virgin Olive OilExtra virgin olive oil
- Seed OilSeed oil for frying
- SaltSalt to taste
- PepperPepper to taste
Method
- Cut the eggplant into cubes and fry in seed oil until golden.
- Toast the pine nuts in a pan over low heat.
- Finely chop the onion and sauté in extra virgin olive oil with dried chili pepper.
- Add the cherry tomatoes, cut, and let them stew.
- Add the diced celery.
- Add the canned chopped tomatoes.
- Add the desalted capers and Taggiasca olives.
- Add the toasted pine nuts.
- Add a handful of sugar and some white wine vinegar. Raise the heat to let it evaporate.
- Add basil and mint.
- Meanwhile, heat the pan pizza in a pan.
- Pat dry the fresh tuna and sear it in a hot pan with a drizzle of oil, about 1 minute per side.
- Season the tuna with lemon zest, basil, a drizzle of raw oil, and a few drops of lemon juice.
- Assemble the panino: place the tuna on the hot pan pizza and top with the caponata.
