Soft and fluffy hamburger buns just like the ones you get at a pub. Made with manitoba and all-purpose flour, enriched with eggs and milk, and brushed with egg for a golden shine.

Method

  1. In the stand mixer bowl, combine 225g milk, 10g sugar, and 10g crumbled fresh yeast. Stir.
  2. Add 2 eggs, then 400g manitoba flour and 100g all-purpose flour. Mix using the leaf hook.
  3. Switch to the dough hook, add 15g salt and 50g sunflower oil in a stream while increasing speed slightly. Knead until smooth.
  4. Form a ball, place in a bowl, cover, and let rise until doubled. To speed up, place in the oven with the light on.
  5. Divide the dough into pieces of about 110g each. Shape each piece into a ball by first stretching and then rounding on the work surface (pirlatura).
  6. Place the balls on a baking sheet, cover with a damp cloth, and let rise again for a few hours until nearly doubled (or in oven with light).
  7. Brush the risen buns with beaten egg.
  8. Bake at 175°C (347°F) until golden.
  9. Once baked, let rest briefly. They will become soft. Then fill as desired.
