Method

  1. Sharpen your knife. Take the pork belly (with the rib side) and make small holes in the meat.
  2. Insert unpeeled garlic cloves and fresh rosemary needles into the holes.
  3. Season the pork with salt and black pepper.
  4. Place the pork on a wire rack over a baking tray lined with aluminum foil. Pour water into the tray to prevent smoke and grease buildup.
  5. Bake at 140°C (280°F) for about 2 hours.
  6. Increase the oven temperature to 230°C (450°F) and bake for another 30 minutes until the skin is crispy.
  7. While the pork is baking, prepare the vegetables: slice cabbage, spring onion, carrot, mushrooms, and any other vegetables into thin strips.
  8. In a pan, heat olive oil. Add crushed garlic and chopped chili pepper. Then add the sliced vegetables and sauté quickly. Season with salt or soy sauce.
  9. Remove the vegetable side from the heat.
  10. Once the pork is done, let it rest. Remove any burnt rosemary or garlic. Slice the pork with a sharp knife.
  11. Serve the sliced pork with the sautéed vegetables. Garnish with lemon thyme if desired.
