Ingredients
13 items- Pancetta di Maiale (con Costolette)Choose high-quality Italian pork belly with the rib side attached.
- GarlicUnpeeled cloves, inserted into the meat.
- RosemaryFresh needles, inserted with the garlic.
- SaltTo taste. Can substitute with soy sauce for the vegetables.
- Black PepperTo taste.
- Olive OilFor sautéing the vegetables. Preferably Ligurian olive oil.
- Chili PepperChopped, to taste.
- Green CabbageOne small head, sliced thinly. You can also use pre-shredded cabbage.
- 1 pcsSpring OnionSpring onion, sliced including the green parts.
- 1 pcsCarrotSliced thinly.
- 2 pcsMushroomsAny mushrooms, sliced.
- WaterFor the baking tray to prevent smoke.
- Timo al Limone(optional) — For garnish (optional).
Method
- Sharpen your knife. Take the pork belly (with the rib side) and make small holes in the meat.
- Insert unpeeled garlic cloves and fresh rosemary needles into the holes.
- Season the pork with salt and black pepper.
- Place the pork on a wire rack over a baking tray lined with aluminum foil. Pour water into the tray to prevent smoke and grease buildup.
- Bake at 140°C (280°F) for about 2 hours.
- Increase the oven temperature to 230°C (450°F) and bake for another 30 minutes until the skin is crispy.
- While the pork is baking, prepare the vegetables: slice cabbage, spring onion, carrot, mushrooms, and any other vegetables into thin strips.
- In a pan, heat olive oil. Add crushed garlic and chopped chili pepper. Then add the sliced vegetables and sauté quickly. Season with salt or soy sauce.
- Remove the vegetable side from the heat.
- Once the pork is done, let it rest. Remove any burnt rosemary or garlic. Slice the pork with a sharp knife.
- Serve the sliced pork with the sautéed vegetables. Garnish with lemon thyme if desired.
