Chinese scallion pancakes made from a simple dough of flour and hot water, filled with fresh scallions and pan-fried until golden and crispy. A quick and delicious snack or side dish.

Method

  1. Mix the flour with hot water until all liquid is absorbed. Add salt and knead by hand for about 4–5 minutes until the dough is smooth and silky.
  2. Cover the dough and let it rest for about 30 minutes.
  3. Meanwhile, slice the green parts of the scallions into thin rings.
  4. After resting, divide the dough into 3 pieces on a lightly floured surface.
  5. Roll each piece into a thin circle. Brush the surface with oil and sprinkle with the sliced scallions.
  6. Roll up the dough tightly into a log, then coil the log into a spiral (like a snail). Tuck the end underneath and press gently to flatten.
  7. Let the shaped pieces rest for at least 10 minutes.
  8. Roll out each piece into a flat pancake, about 1/4 inch thick.
  9. Heat a pan over medium heat with a little oil. Cook each pancake for 2–3 minutes per side until golden and crispy, brushing with a little oil during cooking.
  10. Serve hot as a snack or with a dipping sauce.
