Chinese Scallion Pancakes

Chinese scallion pancakes made from a simple dough of flour and hot water, filled with fresh scallions and pan-fried until golden and crispy. A quick and delicious snack or side dish.

Ingredients
5 items- FlourAll-purpose flour
- Hot WaterHot water (not boiling)
- SaltTo taste
- Spring OnionGreen part only, sliced
- OilVegetable oil, for brushing and frying
Method
- Mix the flour with hot water until all liquid is absorbed. Add salt and knead by hand for about 4–5 minutes until the dough is smooth and silky.
- Cover the dough and let it rest for about 30 minutes.
- Meanwhile, slice the green parts of the scallions into thin rings.
- After resting, divide the dough into 3 pieces on a lightly floured surface.
- Roll each piece into a thin circle. Brush the surface with oil and sprinkle with the sliced scallions.
- Roll up the dough tightly into a log, then coil the log into a spiral (like a snail). Tuck the end underneath and press gently to flatten.
- Let the shaped pieces rest for at least 10 minutes.
- Roll out each piece into a flat pancake, about 1/4 inch thick.
- Heat a pan over medium heat with a little oil. Cook each pancake for 2–3 minutes per side until golden and crispy, brushing with a little oil during cooking.
- Serve hot as a snack or with a dipping sauce.
