Traditional Italian Christmas dessert from central Italy, made with dried fruits, nuts, chocolate, honey, and a hint of black pepper. Also known as pepper bread.

Ingredients

- 125 gHazelnuts
- 125 gMandorle Bianche
- 125 gDried Figs
- 60 gDark Chocolate
- 70 gRaisins
- 70 gArance Candite
- 130 gHoney
- Cinnamonto taste
- 30 gUnsweetened Cocoa Powder
- 100 gFlourall-purpose flour
- Coffee1 small espresso cup
- Black Pepperto taste
- Extra Virgin Olive Oilfor greasing hands
Method
- Blend the walnuts until coarsely chopped.
- Roughly chop the hazelnuts a little larger than the walnuts.
- Chop the almonds similarly to the hazelnuts.
- Cut the dried figs with a knife and add them to the other nuts.
- Roughly chop the dark chocolate and add it to the mixture.
- Soak the raisins in cold water for 20 minutes. Squeeze them well and chop slightly.
- Add the candied orange, honey, cinnamon, cocoa powder, flour, cold coffee, and start mixing everything together.
- Add black pepper to taste.
- Mix thoroughly, then use your hands to press and compact the mixture.
- Let the dough rest for 10 minutes.
- Lightly oil your hands with extra virgin olive oil and form the dough into 6 balls.
- Bake at 160°C (320°F) for at least 40 minutes.
- Let the pan pepato cool completely, ideally for a full day, before cutting and serving.
