Paccheri with Sausage and Romanesco Broccoli

A hearty Roman pasta dish featuring paccheri, Italian sausage, and Romanesco broccoli, finished with pecorino cheese.

Ingredients
9 items- 500 gRomanesco Broccoliabout 1 medium head
- 2 pcsSalsiccia di Monte San Biagioor other quality Italian pork sausage
- Fresh Chili Pepperto taste, chopped
- White Wine1 glass (about 150 ml), dry white wine
- 200 gPasta Paccheroor other large short pasta
- Extra Virgin Olive Oilas needed
- 1 pcsGarlic1 clove, peeled but whole
- Coarse Saltfor pasta water, to taste
- Pecorino Romanofreshly grated, to taste
Method
- Bring a large pot of salted water to a boil.
- Trim the Romanesco broccoli, cut into florets of similar size, and add to the boiling water. Cook until tender but still slightly firm.
- In a large pan, heat olive oil with a clove of garlic and fresh chili pepper.
- Crumble the sausage into the pan and brown it, breaking it up with a spoon.
- Deglaze with white wine, letting the alcohol evaporate completely.
- When the broccoli is al dente, drain it and transfer to the pan with the sausage. Stir to combine.
- Cook the paccheri pasta in the same broccoli water according to package directions until al dente.
- Reserve some pasta water, then drain the paccheri and add them to the pan with the sausage and broccoli.
- Add a splash of pasta water and toss vigorously to emulsify. Remove the garlic clove.
- Grate fresh pecorino Romano over the pasta, toss again, and serve immediately.
