Orecchiette with Pugliese Sauce

A traditional Pugliese pasta dish featuring handmade orecchiette with a fresh tomato and green bean sauce, finished with cacioricotta cheese and basil.

Method

  1. Prepare the dough: mix 200 g of whole wheat durum flour with a pinch of salt, add 100 ml of warm water and knead until smooth and elastic. Cover with plastic wrap and let rest for 10 minutes.
  2. Meanwhile, make the sauce: in a pan, heat a drizzle of olive oil and sauté a crushed clove of garlic and chili pepper to taste.
  3. Add the cherry tomatoes cut into small pieces and the rehydrated, chopped sun-dried tomatoes. Cook over medium-low heat for a few minutes.
  4. Blanch the green beans in boiling salted water for 3-4 minutes, then drain and add them to the sauce. Continue cooking.
  5. Meanwhile, shape the orecchiette: roll the dough into thin ropes, cut into small pieces, and shape each piece by dragging it with a knife and turning it inside out.
  6. Cook the orecchiette in the same boiling salted water used for the green beans until they float to the surface.
  7. Drain the orecchiette and toss them with the sauce, adding fresh basil.
  8. Plate: place a layer of cacioricotta on the plate, arrange the orecchiette on top, and serve with more basil.
