Orecchiette with Broccoli and Sausage

A classic Southern Italian pasta dish featuring orecchiette, tender broccoli, and savory sausage, enriched with a creamy broccoli sauce made from the vegetable scraps and finished with smoked provola and grated caciocavallo cheese.

Ingredients

- 4 pcsSalsicce (Sausages)Italian pork sausages
- 200 gProvola Affumicata Fresca (Smoked Provola)Fresh smoked provola cheese
- 100 gCaciocavallo Grattugiato (Grated Caciocavallo)Grated caciocavallo cheese
- Extra Virgin Olive OilTo taste, for sautéing
- GarlicA few whole cloves
- Chili PepperTo taste, fresh or dried
- Malvasia (Wine)For deglazing; substitute with dry white wine if unavailable
- Sale di Cervia (Cervia Salt)A pinch, or use fine sea salt
Method
- Clean the broccoli: separate the florets and cut the flower into smaller pieces. Set aside the central core.
- Place the central core of the broccoli in water (this water will be used to blanch the broccoli and cook the orecchiette).
- Remove the casing from the sausages.
- In a separate pan, heat extra virgin olive oil with whole garlic cloves and chili pepper.
- Blanch the broccoli florets in boiling water for a few seconds, then drain immediately to set the color.
- In the pan with oil, brown the sausages until almost fully cooked.
- Add the blanched broccoli to the sausages and stir.
- Deglaze with Malvasia wine and let the alcohol evaporate.
- Remove the garlic cloves.
- Meanwhile, bring the water with the broccoli core to a boil, add a pinch of Cervia salt, then drop in the orecchiette.
- Drain the orecchiette al dente and transfer them to the pan with the sausage and broccoli sauce.
- Continue cooking the orecchiette, adding the broccoli broth as needed to create a creamy emulsion.
- Take the cooked broccoli core (the scraps) and blend it into a smooth cream.
- Add the broccoli cream to the orecchiette and mix well.
- Finally, add the smoked provola (cut into pieces) and grated caciocavallo; stir until melted. Optionally let rest before serving.
