A traditional Pugliese pasta made from semolina and water, shaped by hand into small ear-like forms, served with a fresh tomato sauce scented with garlic, basil, and a touch of lemon zest.

- Make a volcano shape with semolina flour on a work surface.
- Add cold water to the center and begin kneading the dough.
- Knead until the dough is smooth and elastic.
- Let the dough rest for about 15 minutes.
- Roll the dough into a long sausage and cut it into small pieces.
- Shape each piece into an orecchiette by pressing and flipping it over your thumb.
- For the sauce: finely chop fresh tomatoes.
- In a pan, heat oil and add garlic, basil stems, and basil leaves.
- Add the chopped tomatoes and cook briefly.
- Finish with lemon zest.
- Cook the orecchiette in boiling salted water, drain, and toss with the sauce.
