Orata all'Acqua Pazza (Sea Bream in Crazy Water)

A quick and tasty way to prepare sea bream in the classic acqua pazza style using an air fryer. The fish is wrapped in parchment and aluminum foil with cherry tomatoes, herbs, garlic, white wine, and olive oil, then cooked to perfection in the air fryer.

Ingredients

Method
- Clean and scale the sea bream (orata).
- Place the fish on a sheet of parchment paper.
- Season the belly of the fish with salt, parsley, and a drizzle of extra virgin olive oil.
- Fold the parchment paper over the fish, then wrap tightly in aluminum foil, twisting the ends like a candy wrapper.
- Add yellow and red cherry tomatoes, basil, parsley, a garlic clove in its skin, salt, pepper, white wine, and a drizzle of extra virgin olive oil around the fish.
- Close the foil loosely (do not roll it tightly) and place the packet into the air fryer.
- Cook at 180°C for 18–20 minutes, adjusting time based on the size of the fish.
- Check doneness by pulling the anal fin; if it comes off easily, the fish is cooked.
- Serve with the softened tomatoes on top. Enjoy the flavorful juices for dipping bread.
