Fried Mozzarella Bites

Crispy, golden fried mozzarella bites with a double coating that stay perfectly stringy inside. Easy to make as an appetizer or snack.

Ingredients
7 items- Mozzarella (mozzarelline o avanzi)Small mozzarella balls or leftover pieces, drained well
- FlourFor coating
- EggsBeaten with salt and pepper
- SaltA pinch, to taste
- PepperA pinch, to taste
- BreadcrumbsBreadcrumbs for coating
- Olio di semi (girasole o arachidi)For deep frying
Method
- Drain the mozzarella (small balls or leftover pieces) in the refrigerator for a few hours, or even overnight, so it becomes very dry.
- Coat each piece thoroughly in flour.
- Beat the eggs with a pinch of salt and pepper.
- Dip the floured mozzarella into the beaten egg, coating completely.
- Roll in breadcrumbs, pressing gently to adhere.
- Repeat the egg and breadcrumb steps to create a double coating.
- Heat sunflower or peanut oil to 160–170°C (320–340°F).
- Fry the mozzarella in small batches, without overcrowding the pan, until golden brown on all sides (about 1–2 minutes). Do not fry too long or the cheese will leak.
- Remove with a slotted spoon and drain on paper towels.
- Serve immediately while hot and stringy.
