Mozzarella in Carrozza

A delicious, stringy Neapolitan street food made with leftover bread and mozzarella, fried to golden perfection.

Ingredients
8 items- Stale Breadday-old bread
- Mozzarellawell drained, day-old is best
- Eggsbeaten with salt and pepper
- Saltto taste
- Pepperto taste
- Flourfor flouring the bread
- Basil(optional) — optional, one leaf per sandwich
- Seed Oilfor frying
Method
- Slice stale bread into slices about 0.5 cm thick.
- Slice the mozzarella into even slices and pat dry.
- Beat eggs with salt and pepper.
- Flour one side of each bread slice.
- Dip the mozzarella slices in the beaten egg and place them on the floured side of one bread slice.
- Add a basil leaf (optional).
- Cover with another bread slice, floured side down, and press firmly with your hands.
- Let the sandwich rest in the refrigerator for about 1 hour to compact.
- Fry in hot oil (enough to reach halfway up the bread) until golden brown, then turn and fry the other side.
- Drain excess oil on paper towels and serve hot.
