A delicious, stringy Neapolitan street food made with leftover bread and mozzarella, fried to golden perfection.

Method

  1. Slice stale bread into slices about 0.5 cm thick.
  2. Slice the mozzarella into even slices and pat dry.
  3. Beat eggs with salt and pepper.
  4. Flour one side of each bread slice.
  5. Dip the mozzarella slices in the beaten egg and place them on the floured side of one bread slice.
  6. Add a basil leaf (optional).
  7. Cover with another bread slice, floured side down, and press firmly with your hands.
  8. Let the sandwich rest in the refrigerator for about 1 hour to compact.
  9. Fry in hot oil (enough to reach halfway up the bread) until golden brown, then turn and fry the other side.
  10. Drain excess oil on paper towels and serve hot.
