Mozzarella in Carrozza (fried mozzarella sandwich) with a perfect breading made from homemade whole grain wood-fired bread, dried at room temperature and ground. The chef shows how to prepare the breading and fry the sandwich to golden perfection.

Ingredients
4 items- Pane Casareccio Integrale Cotto A LegnaHomemade wood-fired whole grain bread, dried at room temperature and ground into breadcrumbs; also used as sandwich bread.
- 2 pcsEggsBeaten for egg wash.
- Mozzarella FrescaSliced fresh mozzarella.
- Seed Oil For FryingFor frying at 160–180°C.
Method
- Prepare the breading: Cut leftover homemade wood-fired whole grain bread into pieces and leave them on racks to dry at room temperature (do not toast or bake).
- Grind the dried bread into coarse breadcrumbs.
- Beat two eggs in a shallow bowl.
- Assemble the mozzarella in carrozza: place slices of fresh mozzarella between two slices of the same bread (use the bread as is).
- Dip the sandwich first in the beaten egg, then coat it thoroughly with the breadcrumbs.
- Heat oil for frying to 160–180°C (test with a wooden skewer: if bubbles form around it, the oil is ready).
- Fry the sandwich until golden brown on both sides, then drain on paper towels.
- Serve immediately.
