Mortadella Mousse with Vol-au-Vent

A creamy and airy mortadella mousse served in homemade vol-au-vent, garnished with sweet and sour peppers, giardiniera, and mortadella cubes. An elegant and quick appetizer perfect for holidays or any occasion.

Ingredients
10 items- Puff PastryUse store-bought or homemade puff pastry.
- Egg YolkFor brushing the vol-au-vent.
- Milk(optional) — A little milk mixed with the egg yolk for brushing.
- SaltA pinch for the small discs and for the mousse.
- MortadellaFor the mousse and for the garnish cubes.
- RicottaUse sheep, cow, or buffalo ricotta according to taste.
- Cognac o Brandy(optional) — A little cognac or brandy for flavor.
- CreamWhipping cream or heavy cream, to adjust consistency.
- Peperoni in AgrodolceSweet and sour peppers, used in the mousse and for decoration.
- Giardiniera(optional) — Pickled vegetables for garnish.
Method
- Cut puff pastry into rounds using a cutter. For each vol-au-vent you need three rounds: one base and two for the edges. Prick the base with a fork. Remove the center from the other two rounds to create rings.
- Stack the rings on the pricked base. Repeat for the remaining vol-au-vent.
- Brush the assembled vol-au-vent with a mixture of beaten egg yolk and a little milk. If you have leftover small rounds (from the centers), place them on a separate baking sheet, sprinkle with salt, and bake as snacks.
- Bake in a preheated static oven at 210°C for about 12 minutes (the small rounds bake for 7-8 minutes) until golden and puffed.
- Meanwhile, prepare the mousse. In a blender, combine mortadella, ricotta, cognac (or brandy), cream, sweet and sour peppers, and a pinch of salt. Blend until smooth and creamy.
- Once the vol-au-vent are baked and slightly cooled, fill them generously with the mousse.
- Decorate the top with additional sweet and sour peppers, giardiniera, and small cubes of mortadella. Optionally, place a baked small round (cap) on the side for presentation.
