Fried discs of leavened dough, topped with tomato sauce, mozzarella, grated cheese, and basil. A typical Neapolitan street food.

Ingredients

- Fresh Brewer's Yeast
- Milk
- Egg
- Butterat room temperature
- Salt
- Tomato Passatafor topping
- Mozzarellacut into small cubes
- Grated Cheese
- Basil
- Frying Oil
Method
- Prepare the same leavened dough as for calzoni (see calzoni recipe steps 1–10).
- After the second rise, roll out the dough to a thickness slightly thicker than for calzoni.
- Cut out discs using a round cutter (coppapasta).
- Fry in hot oil, basting the top with oil using a skimmer, until golden and puffed.
- Drain on paper towels.
- While still hot, top with tomato passata, small cubes of mozzarella, grated cheese, and fresh basil.
- Serve immediately.
