Ingredients

Method
- Clean the fish: remove scales, cut off fins, and fillet the fish. Reserve the heads and bones for the broth.
- In a pot, heat olive oil and sauté garlic, chili, and a piece of ginger until fragrant.
- Add the whole fresh tomatoes, crush them with a wooden spoon, and let them cook briefly.
- Add water (enough to cover) and bring to a boil. Let simmer for 15-20 minutes.
- Strain the broth through a fine sieve, pressing on the solids to extract all the flavor. Discard the solids.
- Return the broth to the pot, bring to a boil, and season with salt.
- Break the spaghetti into pieces and add them to the boiling broth. Cook until al dente.
- Serve hot, garnished with fresh parsley, a pinch of chili, and optionally grated pecorino cheese.
