Mezze Maniche with Pumpkin, Sausage and Gorgonzola

A creamy autumn pasta dish with pumpkin, sausage, and gorgonzola. Easy to make.

Ingredients
8 items- 400 gPumpkinYou can use any variety of pumpkin, such as Napoletana or Mantovana.
- 400 gMezze Maniche
- 250 gSausageCan be substituted with pancetta, minced meat, or speck.
- 200 gSweet GorgonzolaCan be substituted with provola, fior di latte, or taleggio.
- Extra Virgin Olive Oil
- Salt
- 1 pcsGarlic
- Thyme
Method
- Cut the pumpkin into small cubes.
- In a pan with a drizzle of olive oil, add the pumpkin cubes, a clove of garlic, some thyme, and salt. Add a little water and cook until the pumpkin is soft.
- Remove the garlic and thyme, then blend the pumpkin with a bit of the cooking liquid to obtain a creamy pumpkin puree.
- In another pan, brown the sausage in a little olive oil.
- Cook the pasta in boiling salted water.
- Add the pumpkin cream to the sausage and stir.
- Add the gorgonzola dolce and mix until melted.
- Drain the pasta al dente and transfer it to the sauce. Toss and mantecare until well combined and creamy.
- Serve immediately.
