Sweet and sour pork is a classic Asian dish, featuring crispy pork in a tangy sauce with peppers and pineapple.

Ingredients

- Corn StarchFor the sauce, marinating, and batter
- Sugar
- Tomato Paste
- VinegarPreferably rice vinegar
- MaialePork loin or shoulder, cut into cubes
- White PepperCan substitute with black pepper
- Salt
- Seed OilFor marinating, stir-frying, and deep frying
- Chinese WineShaoxing wine or dry sherry
- Bell PeppersBell peppers, any color
- PineappleFresh pineapple recommended
- FlourAll-purpose flour for batter
- Instant YeastInstant yeast or baking powder
Method
- Dissolve cornstarch in cold water and set aside.
- In a saucepan, combine sugar, tomato paste, and water. Bring to a boil, then add vinegar.
- Add the cornstarch slurry and stir until the sauce thickens. Remove from heat.
- Cut pork into small cubes.
- In a bowl, toss pork with cornstarch, white pepper, salt, vegetable oil, and Chinese wine. Let marinate.
- Cut bell peppers into rhombus shapes.
- Cut fresh pineapple into cubes.
- Prepare the batter: mix flour, instant yeast, and remaining cornstarch. Add water to form a thick but fluid batter.
- Heat oil to 160-165°C. Coat pork pieces in batter and fry until pale. Remove.
- Increase oil temperature to 180°C. Fry the pork again until golden and crispy.
- In a wok or pan, heat a little oil and stir-fry the peppers for 2-3 minutes. Season with salt.
- Add the sweet and sour sauce, then the fried pork and pineapple. Toss to coat.
- Serve immediately.
