Mexican Pork Ribs with Beans

A succulent Mexican-style pork rib and bean dish, adapted with Italian peppers. The meat is tender and falls off the bone, served with a creamy pepper sauce and beans.

Method

  1. Add olive oil to a pan and add the pork ribs. Cover with water and add a little salt. Cook on low heat until the water evaporates and the meat is tender and falls off the bone.
  2. Meanwhile, clean the sweet and semi-hot peppers: remove the white pith and seeds. Chop them. Add the whole hot Thai peppers. Place all peppers in a pot, cover with water, bring to a boil, and cook for 15-20 minutes until tender.
  3. Once the ribs are cooked (no water left, only fat), transfer them to a plate or leave in the pan.
  4. Blend the cooked peppers with garlic, onion, cumin, and black pepper until smooth. Strain through a sieve if desired to remove seeds and skins.
  5. Add the pepper mixture to the ribs in the pan. Stir and cook over low heat for 2-3 minutes.
  6. Add the cooked beans. Season with salt if needed. Simmer for about 10 minutes (or 3-4 minutes if beans are very soft) to allow the flavors to meld.
  7. Serve hot.
