This oven-baked pork with potatoes and mushrooms is one of those dishes that smells like home, the oven on, and family Sundays. A rich, hearty traybake with pork ribs, pancetta, sausages, and your choice of mushrooms.

Ingredients
11 items- Potatoespeeled and soaked in water
- Rosemaryfresh sprigs
- Garliccloves in their skins (in camicia)
- Pork Ribspork ribs, cut into pieces or left whole
- Pancettacut into pieces
- Sausagespricked with a fork
- Fennel Seedsto taste
- Saltto taste
- Pepperto taste
- Olive Oilextra virgin, for drizzling
- Mushroomsyour choice, e.g., cardoncello mushrooms
Method
- Preheat the oven to 200°C static. Lightly oil the bottom of a large baking dish.
- Peel the potatoes and place them in a bowl of water to release some starch.
- Place the potatoes in the baking dish. Add rosemary sprigs and garlic cloves (in their skins).
- Cut the pork ribs into pieces if desired (keep ribs whole if you prefer). Cut the pancetta and prick the sausages with a fork.
- Add all the meat to the baking dish. Scatter over more rosemary and garlic.
- Season with fennel seeds, salt, pepper, and a drizzle of oil.
- Bake for 30 minutes.
- After 30 minutes, add your choice of mushrooms (e.g., cardoncello) to the dish. Sprinkle a little salt over the mushrooms.
- Return to the oven and bake for another 30 minutes.
- Serve hot.
