Marco Rufini shares his version of Sunday baked pasta: lumaconi (large pasta shells) stuffed with a mixture of mashed potatoes and ground meat, topped with béchamel, mozzarella, and Parmesan, then baked until golden and bubbly.

Method
- Bring a pot of salted water to a boil and cook the lumaconi for 7 minutes (half the recommended time).
- Prepare the filling: in a bowl combine mashed boiled potatoes, ground portadella (or other ground meat), grated Parmesan, a pinch of salt, and chopped parsley. Mix until homogeneous.
- Drain the pasta and transfer it to an ice water bath to stop cooking.
- Spread a thin layer of béchamel sauce on the bottom of a baking dish.
- Stuff each lumacone with the potato and meat filling.
- Arrange the stuffed lumaconi in the baking dish.
- Add pieces of mozzarella over the pasta.
- Cover with more béchamel sauce and sprinkle with grated Parmesan.
- Bake in a preheated oven at 180°C (350°F) for 20 minutes, until the top is caramelized and golden.
- Serve immediately.
