Linguine with Tuna, Tomatoes, Olives and Capers

A quick and delicious summer pasta with pole-caught tuna, cherry tomatoes, Taggiasca olives, capers, and crunchy fried pepper.

Ingredients
12 items- 350 gLinguine
- Salta pinch
- Olive Oilextra virgin, as needed
- Garlic2-3 cloves
- Peeled Tomatoes1 can (approx. 400 g)
- Basila handful of leaves and stems
- Capers(optional) — to taste
- Olive Taggiasche Snocciolate Sott'Olioto taste
- 250 gTonno all'Olio d'Oliva (Pescato alla Canna)1 can (250 g), drained
- Fresh Chili Pepper(optional) — to taste
- Black Pepperto taste
- Crusco Pepperdried and fried, crumbled for garnish
Method
- Bring a pot of salted water to a boil, add 350 g of linguine, stir gently, and cover.
- In a separate pan, heat olive oil and add garlic cloves. Let them brown gently.
- Add canned whole tomatoes, crushing them with a spoon. Cook briefly, then add basil stems and remove from heat.
- Add capers, Taggiasca olives, and pole-caught tuna. Stir to combine.
- Check the pasta: when al dente, drain it and transfer to the pan with the sauce.
- Turn the heat back on, add a few more tomatoes, fresh basil leaves, a splash of pasta water, and black pepper. Mix well.
- Turn off the heat, add more tuna, and stir again.
- Serve the pasta on a plate. Top with crushed peperone crusco and additional fresh basil leaves.
