A quick and flavorful pasta dish with sweet friggitelli peppers, cherry tomatoes, basil, Parmesan, and a touch of lemon zest.

Method
- Heat oil in a pan and add two cloves of garlic in their skins.
- Prepare the friggitelli peppers: push down the stem, pull it out, and remove the seeds. Slice them thinly.
- Add the sliced friggitelli to the pan with the garlic and oil. Cook until they are wilted.
- Add a yellow cherry tomato (preserved) and a splash of water.
- Cook the linguine in boiling salted water.
- Slice red cherry tomatoes into rounds and tear basil by hand.
- Grate Parmesan cheese.
- Drain the pasta, reserving some cooking water.
- Add the cooked pasta to the pan with the friggitelli and yellow tomato. Add the red cherry tomatoes, torn basil, grated Parmesan, a drizzle of oil, a pinch of salt, and a splash of cooking water. Toss well.
- Finish with fresh lemon zest and serve immediately.
