Linguine with Burrata and Zucchini Flowers

A creamy and fresh summer pasta dish with burrata cream, zucchini flowers, and cherry tomatoes.

Ingredients
8 items- Zucchini FlowersCleaned and chopped
- 1 pcsBurrataOne large burrata, divided: half blended into cream, half reserved for garnish
- Yellow Cherry TomatoesYellow cherry tomatoes, halved or quartered
- 1 pcsGarlicOne clove, crushed
- Extra Virgin Olive OilA drizzle
- LinguineTo taste
- BasilA few leaves
- 2 pcsWalnuts(optional) — Chopped or crumbled; optional garnish
Method
- Clean the zucchini flowers: open them, remove the pistil, cut off the bottom part, and chop them into pieces.
- Take the burrata and blend it with an immersion blender to create a cream.
- Cut the yellow cherry tomatoes and set them aside.
- In a pan, add a drizzle of extra virgin olive oil and a crushed garlic clove; sauté until golden.
- Drop the linguine into boiling salted water.
- When the garlic is golden, remove it and add the cherry tomatoes; sauté lightly.
- Add the chopped zucchini flowers and sauté for another minute.
- Add a ladle of pasta cooking water and let the tomatoes soften.
- Add a few basil leaves.
- When the pasta is al dente, drain it and transfer it to the pan with the sauce.
- Finish cooking the pasta in the sauce, adding more cooking water as needed.
- When the pasta is done, add a few spoonfuls of the burrata cream and some chopped walnuts; toss well.
- Serve garnishing with dollops of burrata cream, basil leaves, and crumbled walnuts.
