A traditional Neapolitan lasagna with rich tomato sauce, béchamel, soppressata, ricotta, mozzarella, hard-boiled eggs, meatballs, and Parmigiano Reggiano, layered with lasagna sheets and baked to perfection.

Method

  1. Prepare the tomato sauce: in a pot, add a layer of extra virgin olive oil and a crushed garlic clove. Brown the garlic, then remove it. Add the tomato passata. Season with salt and pepper, and optionally add a piece of beef nerve or pork rind. Cover and cook on low heat for about an hour.
  2. While the sauce cooks, prepare the meatballs (the video does not detail the recipe for the meatballs).
  3. To assemble the lasagna: in a baking dish, spread a layer of tomato sauce and slightly runny béchamel. Arrange the lasagna sheets overlapping them slightly; spread some sauce on the edges to prevent drying. Fill any gaps with broken pieces of sheet.
  4. Distribute pieces of soppressata (or salame Napoli), crumbled dry ricotta, mozzarella, crumbled hard-boiled eggs, grated Parmigiano Reggiano, the meatballs, fresh basil leaves, a pinch of salt (the salame is already salty), and black pepper. Spread everything evenly.
  5. Add another layer of tomato sauce and repeat the previous layer. Continue until you have three layers (some grandmothers even make four).
  6. Finish with a final layer of lasagna sheets, then tomato sauce, béchamel, a generous handful of Parmigiano Reggiano, black pepper, and basil.
  7. If using no-boil lasagna sheets, prepare the lasagna a few hours in advance to allow the sheets to soften.
  8. Bake in a preheated oven until golden and bubbling (time and temperature not specified in the video).
