Zucchini rolls with sausage: a tasty and versatile dish, perfect for a family lunch or dinner. Thinly sliced zucchini are filled with a savory mixture of sausage, bread, and Parmesan, rolled up, skewered, and baked until crispy.

Ingredients

Method
- Pre-cook the sausage: remove the casing, break the sausage into small pieces, and brown in a pan with a little olive oil until well rosolated.
- Using a mandoline, slice the zucchini lengthwise into thin strips (neither too thin nor too thick).
- In a food processor, combine the bread, leftover zucchini trimmings, the cooked sausage, a drizzle of olive oil, and Parmesan cheese. Pulse until the mixture is compact but not too smooth.
- Place a portion of the filling on each zucchini slice, compact it slightly with your hands, and roll up the slice firmly.
- Thread the rolls onto skewers, about 4 rolls per skewer.
- Oil a baking dish, place the skewers inside, drizzle a little olive oil over the rolls, then sprinkle with breadcrumbs.
- Bake in a preheated oven at 200°C for 10–15 minutes, then finish under the broiler for a few minutes until golden and crispy.
