Tender chicken breast slices pounded thin, filled with cooked ham and cheese, rolled up, breaded with a Parmesan and breadcrumb crust, and baked until golden and melted. An easy and delicious second course.

Ingredients

- Cooked Ham
- Cheeseany melting cheese (e.g., scamorza, provola)
- Breadcrumbs
- Parmigiano Reggianograted
- Olive Oilextra virgin
- Rosemaryfresh sprigs
Method
- Place chicken breast slices between two sheets of parchment paper and pound them thin with a meat mallet or a bottle.
- Place a slice of cooked ham and some cheese on each pounded chicken slice.
- Roll up the chicken tightly to form a roll.
- Wrap each roll in plastic wrap to form a sausage shape (this avoids using toothpicks or string). Refrigerate for a while to set.
- Remove the plastic wrap from the chilled rolls.
- Brush each roll with olive oil.
- Coat the rolls in a mixture of breadcrumbs and grated Parmesan cheese.
- Line a baking dish with parchment paper and drizzle a little oil on the bottom.
- Place the breaded rolls in the dish, drizzle a little more oil over each, and add fresh rosemary.
- Bake at 200°C (400°F) for about 20 minutes, until golden brown and the cheese is melted and bubbly. Optionally, secure rolls with toothpicks if they tend to open.
