Crispy on the outside, cheesy and stringy on the inside. These meat rolls are filled with pancetta, mozzarella, and sun-dried tomatoes, then double-breaded and fried until golden. A simple yet explosive flavor bomb.

Method

  1. Pound the pork loin slices with a meat mallet until thin and tender.
  2. Season each slice with salt and pepper.
  3. Place a slice of pancetta, some cheese (fior di latte or similar), and a few sun-dried tomatoes on each slice.
  4. Roll the meat tightly and secure with toothpicks.
  5. Beat the eggs with a pinch of salt.
  6. Mix breadcrumbs and panko in a shallow dish.
  7. Dip each roll first in the egg, then in the breadcrumb mixture, pressing lightly to adhere.
  8. Repeat the egg and breadcrumb coating for a thicker crunch.
  9. Heat oil to 170°C (340°F).
  10. Fry the rolls in batches until deep golden brown all over, about 4-5 minutes.
  11. Drain on paper towels, remove toothpicks, and serve hot.
