Traditional Roman-style beef rolls stuffed with mortadella, carrot, and celery, slowly cooked in a soffritto with prosciutto, white wine, and tomato passata. A classic second course, often served with fettuccine.

Ingredients
12 items- Noce di Manzo
- Mortadella
- Carrot
- Celery
- Onion
- Prosciuttopieces of prosciutto bone (gambuccio)
- Extra Virgin Olive Oil
- Pepper
- Salt
- Dry White Wine
- Tomato Passata
- Waterone glass
Method
- Select thin slices of beef (noce di manzo).
- Stuff each slice with mortadella, carrot, and celery.
- Roll up the slices tightly and secure with toothpicks.
- In a pan, heat olive oil and make a soffritto with carrot, celery, onion, and pieces of prosciutto.
- Season the rolls with pepper and a pinch of salt.
- Brown the rolls on all sides in the pan.
- Lower the heat and cover the pan to let the flavors combine.
- Remove the lid, deglaze with dry white wine, and let the alcohol evaporate.
- Add tomato passata and a glass of water.
- Simmer on low heat for 40-45 minutes until the rolls are tender and the sauce has thickened.
- Serve hot, optionally with fettuccine dressed with the sauce.
