A classic Italian-style Russian salad made with homemade mayonnaise, boiled vegetables, and Taggiasche olives. The vegetables are cut into irregular shapes for varied textures, assembled in a mold, and chilled before serving.

Method
- Prepare the mayonnaise: using an immersion blender, slowly drizzle in oil while blending until emulsified, then add a splash of vinegar and adjust seasoning.
- Boil the vegetables (carrots, potatoes, Romanesco broccoli) until tender but firm.
- Cut the boiled vegetables into uneven chunks or desired shapes to vary the texture.
- In a large bowl, combine the chopped vegetables with a drizzle of extra virgin olive oil.
- Fold in the mayonnaise until all vegetables are well coated.
- Transfer the mixture into a mold, pressing gently to compact.
- Level the top and optionally add a layer of mascarpone or other toppings.
- Press Taggiasche olives into the top for decoration.
- Refrigerate for at least 2 hours before unmolding and serving.
