A fresh and flavorful bread salad made with stale bread, tomatoes, tuna, sun-dried tomatoes, olives, anchovies, and basil, quickly pan-toasted and tossed together.

10 items- Stale BreadDay-old or 2-3 day old bread
- Extra Virgin Olive OilFor toasting
- Garlic1 clove
- TomatoesTo taste
- SaltA pinch
- TunaCanned tuna, drained
- Sun-Dried TomatoesSliced
- Pitted OlivesPitted olives (any variety)
- Anchovies in OilAnchovies in oil
- BasilFresh, torn by hand
Method
- Slice the stale bread into thin slices, then cut into cubes.
- In a pan, heat a drizzle of extra virgin olive oil with a sliced garlic clove and sauté until fragrant.
- Add the bread cubes to the pan and toast, stirring, until golden and crunchy like bruschetta.
- Cut the tomatoes and season with a pinch of salt.
- Add the tuna, sun-dried tomato slices, pitted olives, anchovies in oil, and torn basil leaves.
- Mix everything together.
- Add the toasted bread cubes and mix again gently.
- Serve the salad on a plate or in a bowl.
