A childhood memory of Giorgione's father's pork trotter salad, turned into a perfect midnight snack.

Ingredients
9 items- Pig's TrottersPork trotters, deboned and cut
- 3 pcsOlivesPitted olives, preferably in brine
- Fennel FrondsWild fennel, finely chopped
- Salsa VerdeGreen sauce
- Chili PepperChili pepper, a pinch
- 4 pcsOrangeThin slices
- OnionHeart of onion, very thinly sliced
- Caco Immaturo Sott'OlioUnripe persimmon preserved in oil, sliced
- Olive OilExtra virgin olive oil, to taste
Method
- Remove the bones and hard parts from the cold pork trotters, keeping the skin and tender bits. Use scissors to cut them into smaller pieces.
- Add a few pitted olives.
- Add a little wild fennel (finocchietto), finely chopped.
- Add some salsa verde (green sauce) and a pinch of chili pepper.
- Slice an orange into thin rounds, without pressing too hard to keep the juice.
- Cut some slices in half and arrange on the plate.
- Take the heart of an onion (the tenderest part) and slice it very thinly.
- Add slices of unripe persimmon preserved in oil.
- Drizzle with olive oil.
- Mix everything gently and serve immediately.
